Ingredients
- 4 lbs cut up chicken
- lemon juice
- 1 garlic clove peeled and halved
- 1 tsp rosemary
- salt and fresh ground pepper.
- 1 tbsp flour
- 2 tbsp olive oil
- 2/3 cup white wine
- 1/2 can anchovy fillets
- 28 oz can tomatoes
- 20 pitted black olives (I would use Kalamata)
Directions
- Rub the chicken pieces with lemon juice and cut surface of garlic clove.
- Mix the herbs and seasoning with the flour and dust the chicken pieces.
- Brown in the oil on all sides, then put in a casserole dish.
- Pour the wine into the frying pan and bring to a boil stirring to get the brown bits from the bottom.
- Add remaining ingredients and pour over the chicken.
- Bake in 350 degree oven for about an hour.

- Great with garlic spaghetti.
