Cajun Lentil Stew

Ingredients

  • 1 tbsp olive oil
  • 1/2-3/4 lb spicy sausage
  • 2 medium onions, chopped
  • 2 cloves garlic, chopped
  • 5 cups water
  • 1 lb dried lentils
  • 1 stalk celery with leaves, chopped
  • 1 green pepper, chopped
  • 3/4 tsp pickling spice
  • 2 cans tomato and chili peppers
  • 2 tsps salt

Directions

  • Sort and rinse dried lentils and set aside.
  • Chop the sausage into small rounds and, over medium heat, brown in a large saucepan in olive oil.
  • Add onion and garlic and allow to become translucent, about five minutes.
  • Add remaining ingredients except for salt, cover, bring to a boil, reduce heat and allow it to simmer for 1 hour.
  • Add salt and simmer a further 1/2 hour or until lentils are well-done.
  • Serve with salad and crusty bread.

The next day the leftovers can be thinned with:

  • 1/2 cup water
  • 1 tsp vegetable bouillon
