Ingredients
- 1 tbsp olive oil
- 1/2-3/4 lb spicy sausage
- 2 medium onions, chopped
- 2 cloves garlic, chopped
- 5 cups water
- 1 lb dried lentils
- 1 stalk celery with leaves, chopped
- 1 green pepper, chopped
- 3/4 tsp pickling spice
- 2 cans tomato and chili peppers
- 2 tsps salt
Directions
- Sort and rinse dried lentils and set aside.
- Chop the sausage into small rounds and, over medium heat, brown in a large saucepan in olive oil.
- Add onion and garlic and allow to become translucent, about five minutes.
- Add remaining ingredients except for salt, cover, bring to a boil, reduce heat and allow it to simmer for 1 hour.
- Add salt and simmer a further 1/2 hour or until lentils are well-done.
- Serve with salad and crusty bread.
The next day the leftovers can be thinned with:
- 1/2 cup water
- 1 tsp vegetable bouillon
