Beef balls Stroganoff

Ingredients 1 lb ground lean beef 1/2 cup milk 1/2 cup bread crumbs 1 tsp salt 1/8 tsp pepper 1 tbsp chopped parsley 3 tbsp butter 1 medium onion, diced finely 1/4 lb mushrooms, sliced 1/2 tsp paprika 2 tbsp flour 1 cup consomme 1/2 cup sour cream 1 tsp Worcestershire sauce salt and pepper to taste Directions Combine the ground beef, milk, bread crumbs, salt. pepper and parsley. Blend well and shape into 1" balls. Melt butter to sizzling in a large, deep frying pan and brown beef balls well all around. Remove the beef balls. Add onion and mushrooms to pan and saute quickly. Sprinkle paprika and flour over contents of frying pan. Pour in consomme, stirring constantly, and cook until mixture thickens. Blend in the sour cream, return the beef balls, add worcestershire sauce and salt and pepper to taste. Heat through thoroughly but be careful not to boil. Serve with mashed potatoes, buttered noodles or rice.

Christmas Meat Pie

Ingredients 1 onion, chopped 1 tbsp olive oil 1 lb lean ground beef 1-1/2 cups beef stock 1 tsp salt pepper to taste 1/2 tsp mixed dried herbs 2 tbsps parsley, chopped pinch of nutmeg 1 tbsp worcestershire sauce 3 tbsps all-purpose flour double pastry for 9" pie 1 egg, beaten Directions Saute onion in olive oil until soft. Increase heat and add ground beef. Cook until meat begins to brown and add stock. Stir thoroughly. Add seasonings, herbs, nutmeg and sauce. Cover and simmer gently for 30 minutes. Blend flour with a little cold water to make a smooth paste. Thicken beef mixture with the paste and allow to cool. Make pastry and line a 9" pie plate. Place the cooled meat mixture into the pastry. Moisten the pastry edge. Roll out remainder of pastry and place on top of pie. Seal pastry edges together, trim and flute. Decorate top of pie and glaze with a beaten egg. Bake in a 425 degree oven for 15 minutes. Reduce heat to 350 degrees and bake a further 25-30 minutes.

Blueberry Chantilly Pie

Ingredients Baked 9" pie shell 4 cups blueberries 1/2 cup honey 1/2 cup water 2 tbsps cornstarch 1 tbsp butter 2 tbsps Cointreau or Grand Marnier 1 cup whipping cream 2 tbsps honey 1/4 tsp almond extract 1/2 cup sliced almonds Directions Blend together 1 cup blueberries, honey and water. Add cornstarch and cook until thick. Stir in butter and Cointreau. Cool. Fold in remaining 3 cups of blueberries and pour into baked pie shell. Whip cream with honey and almond extract. Spoon on top of pie and sprinkle with almonds.

Chicken Lasagna Florentine

Ingredients 6 lasagna noodles, uncooked 1 10 oz pkge chopped spinach 2 cups cooked chicken, chopped 8 oz shredded cheddar cheese 1/3 cup finely chopped onion 1/4-1/2 tsp ground nutmeg 1 tbsp cornstarch 1/2 tsp salt 1/4 tsp pepper 1 tbsp soya sauce 1 can cream of mushroom soup, undiluted 1 8 oz carton sour cream 1 4-1/2 oz jar sliced mushrooms, drained 1/3 cup mayonnaise or salad dressing 1 cup freshly grated parmesan cheese Directions Cook noodles according to package directions; drain and set aside. Drain spinach well, pressing between layers of paper towels. Combine spinach, chicken and next 11 ingredients in a large bowl; stir well to blend. Arrange 2 noodles in a lightly greased 11x7x3" baking dish with lid. Spread 1/3 of the chicken mixture over noodles. Repeat with remaining noodles and mixture. Sprinkle with parmesan cheese. Bake, covered at 350 degrees for 55 - 60 minutes or until bubbly. Let stand 15 minutes before cutting 8 servings.

Apple Mincemeat Crisp

Ingredients 4 cups apples, peeled, cored and sliced (about 5) 1 cup mincemeat 2 tbsps lemon juice 1/2 cup all-purpose flour 1/3 cup browm sugar, packed 1/3 cup rolled oats 1/3 cup butter Directions Combine apples, mincemeat and lemon juice and place in 2 qt casserole dish. In bowl, stir together flour, sugar and rolled oats Cut in butter until mixture resembles coarse crumbs. Sprinkle evenly over apple mixture. Bake in 375 degree oven for 45 minutes or until apples are tender. Makes 6 servings.

Cherry Brownies

Ingredients Base 1 21 0z can cherry pie filling 1 pkge 18.5 oz chocolate cake mix 2 eggs, beaten 1 tsp almond extract Topping 1 cup sugar 1/3 cup evaporated milk 5 tbsps butter of margarine 6 oz pkge semi-sweet chocolate chips Directions Base Combine pie filling, cake mix, beaten eggs and almond extract until well blended. Pour into a lightly-greased, floured, 10.5x15.5x1" pan. Bake at 350 degrees for 20-25 minutes. Cool. Topping Combine sugar, evaporated milk and butter in saucepan and mix well. Boil for 1 minute. Add chips, stirring quickly to melt. Spread over cool cake. Allow to set.

Ingredients Pastry ingredients 2 cups all-purpose flour 3/4 tsp salt 1 cup Crisco 4 tbsp very cold water Pastry Directions Combine flour and salt in mixing bowl. Cut crisco into the flour with a pastry blender until mixture is uniform and resembles coarse oatmeal. Add water in a circular motion onto the flour mixture. Stir with a fork until the mixture is moistened. Shape the dough and divide in half. Shape each into a ball. On a floured surface, flatten ball into a circle by pressing with the palm of your hand. Flip the flattened ball over to flour each side. Roll the dough to a uniform thickness, rolling from the centre to the edges with light, even strokes. Reshape circle and patch any tears or holes with your hands as you work. Flour the rolling pin and surface as required to prevent sticking. Transfer dough to the pie plate. Trim, flute and bake according to the filling recipe. Perfect apple pie 5-7 tart apples 3/4 to 1 cup sugar 2 tbsps all-purpose flour 1/2 to 1 tsps cinnamon dash nutmeg dash salt pastry for two crust 9" pie Apple pie directions Pare apples and slice thinly. Combine sugar, flour, spices and salt; mix with apples. Line 9" pie plate with pastry, fill with apple mixture. Adjust top crust; sprinkle with sugar for sparkle. Bake in 400 degree oven for 50 minutes. Strawberry-rhubarb pie ingredients 1-1/2 cups sugar 1/4 cup all-purpose flour 1/4 tsp salt 1/4 tsp nutmeg 3 cups 1/2" pieces rhubarb 1 cup sliced strawberries pastry for 2 crust 9" pie Rhubarb pie directions Combine sugar, flour, salt and nutmeg. Add fruit, mixing well; let stand 20 minutes. Spoon into pastry-lined pie plate. Moisten edge; adjust top crust; flute edge. Bake in 400 degree oven 40-45 minutes. Serve luke-warm. Pumpkin pie ingredients 1-1/2 cups canned (or fresh) mashed cooked pumpkin 3/4 cup sugar 1/2 tsp salt 1 to 1-1/4 tsps cinnamon 1/2 to 1 tsps ginger 1/4 to 1/2 tsps ground nutmeg 1/4 to 1/2 tsps ground cloves 3 slightly beaten eggs 1-1/4 cups milk 1 6 oz can 2% evaporated milk 1 9" unbaked pastry shell Pumpkin pie directions Thoroughly combine the pumpkin, sugar, salt and spices. Blend in eggs, milk and evaporated milk. Pour into unbaked pastry shell and have the edges crimped high - filling is generous. Bake in 400 degree oven 50 minutes, or until knife inserted in middle comes out clean. Allow to cool before serving with either whipped cream or vanilla ice cream.

Barley and Buttermilk (Melkepap)

Ingredients 3/4 cup pot or pearl barley, pot is better. 1/2 cup raisins 1 litre of 1% Buttermilk 1/2 cup sugar Directions Place barley in medium-sized pot and cover with water. Bring to a boil and reduce to simmer. Keep barley covered with water and simmer for 1-1/2 hours. Add raisins for last 10 minutes. When done the water should be almost completely gone and the barley will be creamy. Add the sugar and buttermilk and mix thoroughly. Store in a 2 litre container.

Braised Sauerkraut

Ingredients 2 tbsps butter 1 medium onion, chopped 3 cups sauerkraut, drained 2 cups beef bouillon 2 apples sliced 2 slices bacon 1 potato, grated Directions Melt butter in large frying pan. Saute onion until golden brown. Stir in sauerkraut and apple slices. Pour in bouillon and place bacon slices on top. Cover and simmer for 30-40 minutes. Add grated potato and continue to simmer, stirring constantly, until mixture thickens. Remove bacon and serve hot.
