Ingredients
- 3 cups grated carrots
- 2 cups white sugar
- 1 cup cooking oil
- 4 eggs
- 1 tsp baking soda
- 7 tbsp warm water
- 1/2 tsp salt
- 1 tbsp vanilla
- 3 cups all-purpose flour
- 1 cup raisins or currants
- 1 cup chopped nuts
- 1/2 cup glazed cherries
- 1/4 cup lemon peel
- 1/4 cup orange peel
- 1 tbsp cinnamon
Directions
- Measure sugar, oil, eggs, soda and water and beat until smooth.
- Mix in salt, vanilla, flour and cinnamon.
- Combine with the fruit and carrots.
- Bake at 350 for 1-1/2 hours or until done.
- Makes two loaves or one angel food pan.
