Alma's Spaghetti Sauce

Spaghetti Sauce Even Keelin can do this :-) Serves 16, or 32 people if you make a second pot! Get 5lbs of ground beef, brown it on a hot pan, then transfer it in a large pot. The pot should have good oil at the bottom of it Add 1 large crushed garlic to the pot, also some browned onions and some (red hot) chilli peppers. Add 3 cans of tomato sauce and 2 cans of diced tomatoes. Add zucchini, red or green peppers or other vegetables of the day. Season with fresh basil, or basil pesto. Add salt or pepper to taste, not too much salt. Let it simmer as long as possible.

Chick Pea Curry

Ingredients ½ red onion 2 tablespoons olive oil 1 clove of garlic ½ thumb-sized piece of ginger ½ a red chili (if you like it spicy like Dave, leave the seeds in!) 1 tbsp curry powder 1 tsp cumin powder 1 tsp ground coriander 1 tsp ground paprika 1 400g tin chopped tomatoes 1 400g tin coconut milk 1 400g tin of chickpeas (drained and rinsed 1 tsp salt ½ tsp ground black pepper small bunch of coriander zest of ½ lime juice of ½ lime 1 avocado Directions Heat the oil on a medium heat. Thinly slice the onion and garlic and add to the pan. Grate the ginger into the pan. No need to remove the skin! Thinly slice the chilli and add to the pan. Add the spices and cook for 30 seconds. Add the chopped tomatoes, coconut milk and chickpeas. Add the salt and pepper. Chop the coriander and add to the pan along with the lime zest. Add the lime juice, season to taste and serve with avocado and the grain of your choice. Lovely!

Orange Scones

Carol Nelles made these wonderful scones for Kevin’s 50th birthday party weekend. They have become a family favorite thanks to Meg our family baker. They are wonderful to bake at the cottage. This recipe makes 8 scones. Ingredients 2 cups all purpose flour 3 tablespoons of sugar 2 1/2 teaspoons of baking powder 2 teaspoons of grated orange peel 1/3 cup butter 1/2 cup of milk 1 egg slightly beaten 1 tablespoon sugar Directions Heat oven to 400F. Lightly grease cookie sheet. In a large bowl,combine flour, sugar, baking powder and orange peel. Using pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Add milk and egg. With fork stir until mixture leaves sides of bowl and soft dough forms. On floured surface, gently knead dough 10 times. Place on grease cookie sheet. Roll or pat into 6 inch circle. Sprinkle dough with 1 tbsp of sugar. Cut dough into 8 wedges. Separate slightly Bake at 400F for 15 to 20 minutes or until golden brown. Serve warm.
